- mirin (sweet cooking rice wine)

How to cook
- Rice should be cooked hard with about 3 tablespoons less water than normal.
- Cut fried tofu in half, drain off the oil by pouring boiling water over it, remove from heat and squeeze out the water.
- Put all the ingredients for 【 fried tofu Boiling Soup】 in a pan and heat.
- When sugar is dissolved, add 3. and simmer over low-medium heat. 10 minutes later, turn off the heat and let cool.
- When the rice is cooked, add the “Mino Tokusen Sushi Vinegar” while it is still warm and mix quickly as if cutting.
- After the rice has absorbed the vinegar to some extent, cool it at once by fanning it with an uchiwa (fan, etc.).
- Squeeze the juice from 5. lightly and fold the top of the pouch inward to fill with rice. Garnish with other ingredients as desired.
Cooking Tips
- Be careful not to burn yourself when wringing out fried bean curd that has been covered with boiling water in step 3, because it is hot.
