How to cook
- Remove excess fat from the chicken and make several cuts with a knife in the thickest part, skin side down. Rub sake and soy sauce over the chicken and let stand for 15 minutes.
- In a bowl, mix the ingredients for “flavor sauce”.
- Wipe off the water from 1. with a paper towel and sprinkle evenly potato starch.
- Heat oil in a frying pan to 170℃, add 3. and deep-fry until the surface is crispy and golden brown.
- Cut 4. into bite-size pieces, place on a plate lined with lettuce, and pour the “flavor sauce” on top.
